Ingredients
- 1 2/3 cup of all purpose flour
- 1/2 cup of sugar
- 6 tbsp of butter (melted or room temperature)
- 1tsp baking powder
- 1 large egg
- 1.5 tsp vanilla extract
- 3 tsp amaretto ( I used Disaronno)
Instructions
- Set the oven to 355 degrees
- Melt the butter, then mix with the sugar
- Whisk the egg, vanilla, and amaretto in a bowl, add to mixture and stir
- Add baking powder and flour and stir until combines
- Split the ball of dough in half. Each half will get you 12 cookies, so split the dough half into 1/4s then break each of those into 1/3rds to have enough dough to roll into a small ball with your hands.
- Place the balls onto an oven tray lined with parchment paper and then insert into the oven for 15 minutes
- Let cool and serve!
About this recipe
This is a recipe I came up with by experimenting with the Hato Cookie recipe from OneCookBook. Originally, I made it as is. Then I got curious and started experimenting with swapping out the flour for various amounts of hazelnut flour or others. Eventually, I got into fatwashing and making brandy butter and that sort of naturally led to the creation of these cookies. I spent some time experimenting with the ratios, but I think this one here is really good!
